Food - something cheesy!

A lot of people share recipies on their blogs, but I struggle with that, being a sort of bucket chemist in my aproach to family food.

This amazing cheese mattress looks like a soufflĂ© but I don't believe it is!

It was made using a whipped up blend of fromage frais and three eggs. But it will also work with plain yoghurt. Before it went into a getting-warm oven, I sprinkled finely grated cheese on top. Then I baked it until it looked beautiful.

It went down smashing with fried mushrooms and grilled tomatoes!

I just love to make potato cakes ...

And eat potato cakes too!

For some time now I have had some willing helpers to do some mashing and mixing, and i can often leave them to it now for the most part, but not way back, when this video footage was taken, Baking with three under three I needed several pairs of hands and I can't imagine how I filmed it too!

So cute to see! And it used to be the only way my children would eat their 'tapeos', but now its a fab way to use up leftovers!

tarts again!

i made another batch of oinion tarts, i am so happy to have found a fun way to use up lots of onions, and feed the children an interesting lunch at the same time ...

first fry your onions gently, not to brown them, in a nice oil, and after about half an hour cover with water and simmer till is disappears. This brings out the sweet taste of the onions ...

i read a lot of recipes on line, before deciding on a method, but I tend to cook by feel! The pasty is a short crust, I don't bother to sieve or rest in the fridge (the pastry, not me!)but this is a batch using 4oz flour and 2oz fat ...

here is a try of tarts ready for the hot oven ...

and baked, the hot steamy tarts, now I feel hungry all over again!
